Happy Father's Day!

What I'm cooking for Father's Day (without my father since he's in South Africa!)....a lighter version of the traditional deep fried calamari.  Served with a caprese-style salad and lemon wedges.



Serves 1

Lightly Fried Calamari Rings:
3 tbsp wholemeal flour
1/4 tsp fine sea salt
1/4 tsp freshly ground black pepper
1/4 tsp dried oregano
250gr calamari rings
2 tbsp olive oil
Place the flour and seasoning in a plastic food bag and toss to mix the ingredients.  Add calamari, twist the bag close and shake.
Heat the oil in a large frying pan.  Remove the calamari from the bag, shaking off any excess flour and place in the frying pan.  Fry on high heat for 2 1/2 minutes per side until lightly golden.  Serve warm.

Simple Caprese-style Salad:
2 thick slices buffalo mozzarella
2 thick slices tomato
pinch of dried basil (or chopped fresh basil leaves)
extra virgin olive oil for drizzling
Arrange the mozzarella and tomato slices in a plate.  Sprinkle with herbs, drizzle with olive oil and serve.
