Just a quick note to wish all my followers a Happy New Year and wonderful 2012. In case you're wandering, no I haven't fallen off the blogger bandwagon...
I'm still around and have some exciting news to share soon. So while I get myself together and work on my next recipe, I'll leave you with a photo of the Vasilopitta I made this year. For those of you who don't know what that is, I wrote a post about it here.
I adjusted the recipe slightly by swapping the milk
for yoghurt. As you can see, the cake is cracked on top and not perfect
looking (lets say it's "rustic") but it tasted exactly the way it was
supposed to. I'm also happy to say that I found the lucky coin (finally!), so I'm looking forward to an amazing 2012.
By swapping the milk with yoghurt, the cake was not as dry as last years' attempt. This is a handy tip I often use when baking - yoghurt, sour cream or buttermilk are wonderful ingredients for adding moisture to cakes and muffins. I use Greek yoghurt because I always have this in my fridge (need I say more!).
