Chia seeds are a nutritious ingredient with a long list of benefits that include boosting energy, high in Omega 3, fiber, protein and vitamins. The word chia means "strength" in the Mayan language and was used by warriors thousands of years ago. Today athletes and health enthusiasts use this ingredient in puddings, smoothies, porridge, baked goods or salads. The average serving is 1 -2 tablespoons and when mixed with liquid, the seeds swell up and become gel-like. Since they continue to expand after they are eaten and they also help curb hunger. Just be careful not to consume too many as they are quite high in fiber.
Chis seed pudding with cacao and bananaServes 4
500ml / 2 cups coconut milk (or any other non-dairy milk)
8 dates, pitted and chopped
1 heaped tablespoon raw cacao powder
1 teaspoon vanilla essence
1 banana, chopped
½ cup white chia seeds
1. Blend all the ingredients except chia seeds in a blender until smooth.
2. Stir in the chia seeds and mix well.
3. Divide into 4 jars. Seal with the lids and refrigerate overnight.
4. Serve cold with berries, nuts and seeds.
