Spelt butter cookies
With ingredients like spelt four, real butter and coconut sugar, these biscuits will please both kids and adults alike and is ideal for Halloween or Christmas baking and anytime of the year treats.
Spelt butter biscuits
Makes 35 medium biscuits
300gr spelt flour
100gr coconut sugar
grated rind of 1 organic orange (optional)
5ml vanilla powder or essence
200gr organic salted butter, softened at room temperature
1. Preheat the oven to 180°C/350°F /Gas 4 and line two baking trays with parchment paper.
2. In a mixing bowl add the flour, sugar, orange rind, vanilla powder and soft butter. Using the flat / paddle attachment, beat on low speed until a soft dough forms. It will first resemble breadcrumbs before it binds together as a dough.
3. Turn out the dough onto a floured surface and roll out with a rolling pin using extra flour to prevent sticking. Cut shapes of your choice using a cookie cutter and place them onto the baking trays.
4. Bake for about 10 - 13 minutes or until lightly golden on the edges. Allow to cool slightly before transferring them onto a wire rack to cool completely. Store in an airtight container.
