Fresh fruit salad

A good seasonal fruit salad is the perfect end to a meal–sweet, crisp and refreshing with a tangy citrus dressing. Use colourful seasonal fruit such as mangos, plums and peaches and make it a few hours in advance for all the flavours to combine. Using ripe and seasonal fruit make this dish naturally sweet so that you don't need to add any extra sugar.

Fresh Fruit Salad

Serves 6

3 large granny smith apples

4 large peaches

4 plums

2 large mangoes

3 kiwi fruit

Seeds of half a pomegranate

Fresh orange juice / orange based fruit juice blend

  1. Peel and dice fruit and place into a large bowl.  Scatter over the pomegranate seeds and pour over enough fruit juice to cover the fruit. Any exposed fruit pieces will brown. 

  2. Toss well, cover with a lid and refrigerate until required.

  3. Optional: serve with whipped cream or ice cream of your choice.   

Boozy variation: Make this extra special by adding a shot (or two)of Grand Marnier.
