Bulgar wheat pilaf with peanuts & raisins

This simple and festive bulgar wheat pilaf is inspired by a Mediterranean style pilaf. Bulgar wheat is a whole grain cracked wheat that is high in fibre and full of nutritional value, making this pilaff a healthier side dish.

BULGAR WHEAT PILAF WITH PEANUTS & RAISINS

Serves 4

1 small onion, diced

1 cup bulgar wheat

100g mixed peanuts and raisins

2 tablespoons extra virgin olive oil

1/4 cup finely chopped parsley

1/4 teaspoon ground cinnamon

  1. Sauté onion in olive oil in a medium pan until softened. Remove from heat and stir in bulgar wheat, 2 cups hot water, peanuts and raisins and cinnamon.

  2. Bring to a soft boil, remove the pan, cover with a lid and leave to rest for 10 minutes until the bulgar wheat is cooked through.

  3. Fluff the bulgar stuffing with a fork and mix in the chopped parsley. Serve alongside a roast dinner or lunch.

VARIATIONS: Substitute peanuts with walnuts, pecan nuts or almonds and dried cranberries for raisins.
