Lemonade

In the Mediterranean, fresh lemon juice is frozen during the winter months and used throughout the year in salads, as a seasoning on food and in preparation of fresh lemonade during the long hot summer. This incredibly easy recipe for lemonade is sweetened with only honey. Topped with sparkling water, this fizzy version is the perfect drink on hot summer days.

LEMONADE

Serves 4 / 1 litre

1/2 cup freshly squeezed lemon juice

1/3 - 1/2 cup honey

800ml sparkling water

fresh mint leaves, to garnish

  1. Dissolve honey in lemon juice by stirring well or using a blender. Start with less honey and add more as desired.

  2. Add lemon mixture to a 1 litre glass jar. Top with sparkling water and stir to combine.

  3. Serve cold over ice and garnish with mint leaves.
