These avocado based mocha cups are a creamy, chocolate mousse type dessert with a hint of coffee and sweetened with local date syrup (made from only dates). You can substitute the date syrup with honey or maple syrup. Top each coffee cup with fresh seasonal berries and pomegranate arils for a healthier Mediterranean style treat.

MOCHA AVOCADO CUPS

Serves 4

3 medium avocados, pitted and skinned

6 tablespoons cold espresso

4 tablespoons date syrup

4 tablespoon raw cocoa powder

3 tablespoons coconut oil

Topping: seasonal berries, unsweetened shredded coconut

  1. Blend all ingredients in a food processor.

  2. Divide the mixture into 4 small coffee cups and top with fruit. Chill before serving.
