Rose & strawberry smoothie

School’s out for early spring break and extended due to coronavirus fears. As unsettling as this sounds, I’m trying to focus on how to fill the days with interesting and fun projects for my five and seven years old boys. Teaching my children how to be self sufficient in a kitchen is something I’ve always considered important. I often use this to not only keep them busy, but to educate them as well.

Cooking is a life skill that not only teaches kids how to eat healthy, but can also be used to reinforce age appropriate school subjects at home such as:

  • encouraging independence

  • geography (where does food come from)

  • language and spelling skills

  • maths skills (adding and subtracting, multiplying, measuring, shapes, how much does it cost)

  • science (making predictions, seeing how food changes when cooked)

Although my boys are not always interested in helping me, there are times when I make their favourite foods and they love helping and try to make it all by themselves. My youngest son, Andreas, is a smoothie lover. He loves making them as much as he loves slurping it up afterwards (and usually asking for more). I tested this rose and strawberry smoothie with him, allowing him to carefully measure each ingredient, place it all into the blender and, his favourite part, pushing the button and watching is all whizz up into a gorgeously thick and filling breakfast drink or snack. Try it with a variety of berries, or make it dairy-free with coconut yoghurt.

ROSE & STRAWBERRY SMOOTHIE

Serves 2

1 cup frozen strawberries

1 cup coconut milk

2 tablespoon Greek yoghurt

1 tablespoon honey, to taste

1 tablespoon rosewater

  1. Blend everything together and serve immediately.
