Spelt butter cookies

Spelt butter cookies with dark chocolate chips. Irini Savva.

With ingredients like spelt four, real butter and coconut sugar, these cookies will please both kids and adults alike and are ideal for anytime of the year treats. Flavour to your taste by adding dark chocolate chips, chopped nuts, oats or unsweetened dried fruit.


Spelt butter COOKIES

Makes 35 medium cookies

Ingredients
300gr spelt flour
100gr coconut sugar
5ml vanilla extract
200gr organic salted butter, softened at room temperature

Method
1. Preheat the oven to 180°C/350°F /Gas 4 and line two baking trays with parchment paper.
2. In a mixing bowl add the flour, sugar, vanilla extract and soft butter. Using the flat / paddle attachment, beat on low speed until a soft dough forms. It will first resemble breadcrumbs before it binds together as a dough.
3. Turn out the dough onto a floured surface and roll out with a rolling pin using extra flour to prevent sticking. Cut shapes of your choice using a cookie cutter and place them onto the baking trays.
4. Bake for about 10 - 13 minutes or until lightly golden on the edges. Allow to cool slightly before transferring them onto a wire rack to cool completely. Store in an airtight container.

Variations - add the following flavourings to step 2:

  • Citrus: finely grated rind of one orange or lemon

  • 1/2 cup dark chocolate chips

  • 1/2 cup chopped nuts, dried fruit or oats (or a mixture)
