Spicy red pepper & goats cheese dip

Roasted red pepper 4.jpg

Spicy red pepper dips are ever popular on a Greek table. This version is made using jarred roasted red pepper dip from Tradifresh-a flavourful red pepper dip grown and produced in Florina, Greece. Combine with creamy goats cheese and fresh local chilli, and you have an easy to prepare dip for those long Mediterranean style mezze lunches, or simply spread it onto pita bread for a quick tasty snack.

Florina’s red pepper’s have been cultivated in the region for decades by family owned farms and are now available in convenient to use jars. Known for their deep red colour and rich sweet taste, florina peppers are ideal for a variety of Greek and Mediterranean dishes.

SPICY RED PEPPER & GOATS CHEESE DIP

Makes 250ml / 1 cup

180g soft goats cheese

3 heaped tablespoons Tradifresh Red Roasted Pepper Spread

1 clove garlic, crushed

1 teaspoon finely chopped red chilli (to taste)

1 tablespoon extra virgin olive oil

Freshly ground black pepper

  1. Place the goats cheese into a medium sized bowl and mix with a spoon until smooth. Add the remaining ingredients, stirring well until the dip is soft and creamy but still a little chunky. If you like a smoother consistency, blend all the ingredients in a food processor.

  2. Serve with prepared vegetables, pita bread or crackers.
